It’s the most wonderful time of the year….cookie season! I really can’t get enough cookies around Christmas, so I am excited to share my cookie love today as a guest poster on Twin Stripe.  Twin Stripe is my friend Katie‘s lovely blog all about food, design, parties, and the fun things in life!  She is going to have some great Christmas recipes this week, so be sure to check them out.

There have been a lot of cookie recipes on Chez CateyLou lately like these gingerbread cookies and these white chocolate cranberry cookies, but I saved my favorite one to share with you today.  These Peanut Butter Reindeer Cookies are the cutest cookies I have ever made!  Look at those little faces – aren’t they precious? Butterfinger Peanut Butter Oatmeal Cookies

Halloween is coming up, and you know what that  means…candy everywhere!!  What a great holiday.  I’ll take any excuse I can to eat more sugar.   I have the perfect recipe today to use up some leftover Halloween candy, or to take advantage of the Halloween candy sales that are all over the stores.  This cookie uses one of my favorite candy bars – Butterfinger.  Butterfinger Peanut Butter Oatmeal Cookies.  There is a lot going on in this cookie!  Continue reading

Chocolate Peanut Butter Munchies

Are you tired of chocolate peanut butter recipes yet?  I sure hope not, because they are not going anywhere.  We (and especially TheBetterHalf) are just way too obsessed with that flavor combo! We have Häagen-Dazs Chocolate Peanut Butter ice cream in our freezer pretty much all the time.  It is a dangerous habit.

I’ve had my eye on this cookie recipe for a long time now.  I’ve seen them called Magic in the Middles, Chocolate Peanut Butter Surprise Cookies, Buckeye Cookies – whatever they are called, a chocolate cookie with peanut putter filling is pretty much pure heaven!  First you make a basic chocolate cookie dough. Form it into balls and set it aside while you make the filling.  Mix together peanut butter and powdered sugar, and form that into little balls as well.  That stuff can be sticky!  I used slightly damp hands when I was making the filling balls, and that worked well for me.  Then you flatten out your cookie dough ball, place a peanut butter ball inside, shape the dough around the filling, and voila! I can see why people call them magic in the middles – you think it is just a simple chocolate cookie, but then you bite into it and there is sweet, peanut butter deliciousness!  Magic some might say.   Continue reading

Skinny Peanut Butter Brownies

After the not-so-light recipe I posted earlier this week, I have something a little bit healthier for you today.   But I promise, these skinny brownies taste amazing!!  I was skeptical when I first saw this recipe  – I mean how can you make a brownie without oil or butter?  But I was intrigued so decided to try it out.  And wow, am I glad I did.  These brownies are amazing!!  They are so moist and fudgy – and the peanut butter swirl just puts them over the top!  As a bonus, they are so pretty!  I felt like a kid in art class making the marble swirl of PB on top of the batter.   Continue reading

No-Bake Chocolate Peanut Butter Bars

photo (28) I blame the heat. Why else would I make a recipe like this – one that I KNOW TheBetterHalf and I will have absolutely no self control around?? This past week, we had a heatwave in NYC, and it made all of us a little crazy. Most Saturdays I will bake a loaf of bread or some muffins or a coffee cake, things that are delicious, but that I can usually stop eating after one or two pieces. Not this past Saturday…it was WAY too hot to turn on the oven. So I had the brilliant idea of making this no-bake recipe. This recipe is essentially a homemade Reese’s Peanut Butter cup, and it makes a whole tray of them!  I’m not sure if you have noticed yet, but chocolate peanut butter is our absolute favorite dessert combination. And these bars are amazing!! I knew before I made them that I would not be able to stop eating them. But I decided to make them anyway. And I’m very glad that I did.  A sweet and salty peanut butter bar topped with chocolate – what’s not to love?! They are so good, but so dangerous! That darn heat totally ruined any kind of healthy eating plan I had in mind for the weekend. Oh well, I guess that’s why they invented treadmills!  Continue reading

Peanut Butter Chocolate Chunk Cookie Bars

How have I never made cookie bars before? That is really a great question, because these were SO easy and SO good.  I was sitting on the couch the other night, craving something sweet (by the other night I mean every night…) and decided I wanted to whip up something quickly.  No chilling of the dough or softening of the butter or getting out the heavy stand mixer (I love my mixer, but it is so darn heavy, and there is no room for it on our counter top!).  And then I stumbled on this recipe from Averie Cooks and had to make them immediately. It is seriously so easy! Just mix together the ingredients, spread it into a baking pan, and bake for about 20 minutes. Voila! Chocolate peanut butter heaven.  Continue reading

Peanut Butter Cup Cookies

Chocolate and peanut butter is a popular combination in our kitchen. In fact, I think it might be our absolute favorite dessert flavor. We really can’t get enough chocolate peanut butter anything! I bought the cutest mini Reese’s peanut butter cups the other day, and they were just begging to be baked into a delicious peanut butter cookie! Let me tell you, these cookies are dangerous.  It is impossible to stop at one and still pretty hard to stop at 3… The cookie is so soft and chewy , and has a slight caramely flavor from the brown sugar. The peanut butter definitely shines through, and the mini reese’s get soft and melty. They are seriously addicting!   Continue reading
