It is December 1 – let the Christmas recipes begin! I have a hard time getting into the Christmas spirit until Thanksgiving and my birthday have passed. But once they are over, I start to get so excited about Christmas. TheBetterHalf and I just got back from an amazing trip to Paris and Brussels (more to come about our trip in a future post) and both cities were all decked out for Christmas. It was gorgeous, and got me in such a festive mood!
So when I woke up at 5:00am this morning because of jetlag, naturally my thoughts immediately went to Christmas baking. I’m back with another pumpkin recipe. I just can’t stay away! For some reason this time of year all I want to eat is pumpkin! Like these pumpkin doughnuts, or these pumpkindoughnuts, or these pumpkin muffins. I can’t believe I am about to say this, but I like it even more than chocolate right now. Happy Friday! To celebrate the weekend, how about some pancakes? But not just any ordinary pancakes (although there’s nothing wrong with plain ol’ buttermilk pancakes or whole wheat pancakes) – sweet potato pecan pancakes! I was thinking about making pumpkin pancakes, but I have been on pumpkin overload lately. So I figured why not try out the “other orange puree” – mashed sweet potato!
